Primal Breakfast Casserole

If you’re looking for a healthy, grab-and-go breakfast, casseroles are perfect. You can bake a casserole on Sunday and have breakfast ready to go all week.  You can use any ingredients you like and the possibilities are endless, but I really like this combination from Mark’s Daily Apple.  Turnips are a great substitute for potatoes if you’re looking for something lower in calories and carbs.  Another great substitute is kohlrabi, which I just discovered last year when we joined a local CSA.   The link to the recipe is below.
