Sunday Morning Pancakes

Weekends are a great time to get away from our normal breakfast routines.  At our house breakfast is usually a couple of eggs and a side of veggies or fruit.  However, on the weekends, it’s nice to do something a little more exciting for breakfast.  Unfortunately that usually means high calorie, highly processed foods that end up making you feel sluggish the rest of the day.  Luckily, we found this great recipe for pancakes using only two ingredients, eggs and bananas.

Two Ingredient Pancakes

  • 4 eggs
  • 2 banana

Smash bananas in a bowl and then add whisked eggs.  Mix everything together.  Heat a non-stick skillet and lightly spray with oil.  Turn the heat to medium-low.  Spoon banana/egg mixture onto the skillet (amount equal to the size of pancake you want to make, but smaller pancakes work better).  Heat until the edges of the pancake begin to solidify.  Flip the pancake and cook for another 30 seconds to 1 minute.  Makes 4-5 medium size pancakes.


Heat berries over low heat in a small saucepan.  Blueberries seem to work the best, but you can use whatever you want.  I personally like to use a mixture of berries.  We used blackberries in the picture above because that’s all they had at the grocery store.  The blackberries didn’t create as much of a syrup as blueberries usually do, but they were still tasty.  As the berries start to heat up, they will turn into a syrup.  Spoon the syrup over the pancakes and enjoy!
